Shrimp Boil

1 1/2 lbs baby red potatoes, cut larger potatoes in half
3 ears corn, cut in half or thirds
2 large carrots, peeled and ends trimmed
2 celery stalks, ends trimmed
1 red onion, peeled and cut in half
1/3 c Cajun / creole / bay seasoning, buy or look up internet recipe to throw your own together (this is what I did) 1 stick butter
1 large lemon, cut in half
1 lb large shrimp, leave shell on
1 pk Aidells Chicken & Apple sausage, cut into 1 inch pieces
Sea salt to taste
Fill half of large pot with water and season with butter, Cajun mix, sea salt, carrots, onion, celery and lemon (squeeze juice in and put entire lemon in the pot also). Boil for 10 minutes. Taste liquid to see if more salt or other seasoning is needed. Add potatoes and lightly (medium heat) boil for 10 minutes. Add corn and sausage and cook for 5 minutes. Add shrimp and cook for another 5 minutes or until shrimp are done.
With a slotted spoon, serve shrimp, potatoes and corn in a shallow bowl or plate. Normally shrimp boils are served at restaurants drained and spread out on paper and people eat with their hands and peel the shrimp. Can also put other shell fish in. It's a fun and easy dinner.
